Thinking outside the lunch box

GOVERNMENT surplus wanna-be cheese melted on fiber-free pizza bread, topped with greasy, preservative-laden pepperoni may be a child's idea of a great school lunch.

But that lunch is at least partly to blame for a pretty scary statistic — a record 28 percent of California children are obese. We have the second fattest kids in the nation.

At the root of the problem, nutritionists say, is that children are oftentimes so unfamiliar with fresh foods that they fail even the simplest "name that veggie" quiz.

On top of that, the majority of school lunches served this fall will continue to be made with low-cost, low-quality government commodities — mostly canned and frozen foods.

The good news is that school lunch is in for a massive makeover by next July, when new federal laws regarding school lunches take effect.

Your Health Comes First!

Before being diagnosed a diabetic in 2003, I did not focus a great deal on my diet or the nutritional value of the foods that I was eating. I never thought that food would be my enemy. But because so many foods that our families eat today are synthetic, processed and have poor nutritional value, I had to take a step back and make a lifestyle change. At first, I was in denial and informed my doctor that I wanted to try controlling my diabetes solely through watching my diet. After a follow-up visit, my blood-glucose levels had not made a significant change. So I began taking daily insulin shots to manage my blood sugar. In addition, there was an about-face with exercise and proper rest. I lost 65 pounds over the next 6 months. My body had not looked this good in a long time and my energy level was soaring.

Zambia: Improved Nutrition Through Maize Meal Fortification

GENERAL nutrition levels in Zambia indicate that one in every two children under five years of age suffer from iron deficiency.

The justification is that children experience rapid physical growth. Thus, sexual maturation significantly increases.

They develop a need for micronutrients, especially iron, while adolescent girls' growth spurt occurs before menarche - first menstrual periods.

Adolescent children continue to grow in height. Linear growth particularly of the long bones is not complete until the age of 18 and peak bone mass is not achieved until the age of 25.

At two years of age, many of the children who survive under such nutritional stress are stunted due to lack of Vitamin A with little chance of recovery.

Moreover, in some parts of the world children, especially girls, are discriminated against in access to food, health care and education.

INSIDE OUT Rejuvenate your skin

THE largest organ in the human body probably receives more punishment than any other part. Its job is to insulate and protect, as well as give the body its appealing package.

Can you imagine yourself without your skin? We would die without it. So lets learn how we can improve, even rejuvenate, it.

Here are some helpful ideas from the Philippine Dermatological Society (PDS):

Basic truths

Eos. Oxygen to regenerate and rejuvenate skin has been around for over a century. The application of oxygen to the skin reverses aging almost instantly. A clinic called Eos (after the Greek goddess of air) in Laguna designed the EO2S rejuvenation oxygen therapy.

Some 300 million years ago the atmosphere was 21-percent oxygen. Today, the oxygen content of the air is 18 percent.
